This phrase has a common sense origin and dates back to the theatre.
Whilst everything was seamless (hopefully) and going well on the visible parts of the stage, all sorts of chaos could be going on out the back - behind the scenes - and the nice and graceful image out front therefore could give quite a different impression.
Hence wanting to know what is happening 'behind the scenes' to get a sense of what is really going on.
